Oyster mushrooms are the backbone of the grow kit world. They are fast, forgiving, and come in enough varieties to keep things interesting. But not all oyster kits are created equal. we have tested kits ranging from twelve quid to forty, and the difference in quality is staggering.

This guide covers three distinct oyster species, each with its own character. Choosing the right one depends on your kitchen, your climate, and how patient you are.

Understanding the Oyster Family

"Oyster mushroom" is actually an umbrella term covering several related species, each with meaningfully different growing requirements and culinary properties:

  • Pearl oyster (Pleurotus ostreatus). The classic. Grows at a wide temperature range, produces big clusters, savoury flavour with hints of anise. The most forgiving species for beginners.
  • Pink oyster (Pleurotus djamor). A tropical species that needs warmth (20°C+) but grows astonishingly fast. Striking pink colour fades when cooked. Mild, slightly sweet flavour.
  • King oyster (Pleurotus eryngii). The gourmet choice. Thick stems, small caps, dense meaty texture. Needs cooler temperatures and takes longer, but the culinary result is outstanding.
  • Blue oyster (Pleurotus columbinus). Similar to pearl but prefers cooler conditions (10–18°C). Slightly firmer texture. Excellent for autumn and winter growing.

#1: Pink Oyster Family Kit. 8.8/10

The Pink Oyster Family Kit takes our top spot for the simple reason that it does everything right and does it fast. Within four days of opening the box we had visible pins, and by day seven we were harvesting clusters of vivid pink mushrooms that looked almost tropical. The flavour is mild, slightly sweet, and excellent in stir-fries or on toast. Pink oysters are a warm-weather species (they need 20–30°C to fruit well), so they are perfect for summer growing or houses that run warm. We got two solid flushes totalling around 250g, with a smaller third flush that added another 50g. At twenty-three quid, the price-to-excitement ratio is unbeatable. The only real drawback is that pink oysters do not keep well once harvested. you need to cook them within a day or two.

#2: Premium Oyster Growing Kit. 8.5/10

Price: £29.99 · Species: Pearl Oyster (Pleurotus ostreatus) · Harvest: 10–14 days

The Premium Oyster kit is the workhorse of our collection. Pearl oysters are the most commonly grown species worldwide for good reason. they are reliable, versatile in the kitchen, and tolerant of a wide temperature range (10–24°C). This particular kit produced three substantial flushes and a decent fourth, giving us over 400g of mushrooms in total. The substrate quality was noticeably better than cheaper pearl oyster kits we tested. thick, healthy mycelium that colonised evenly. Pearl oysters have a more savoury, almost anise-like flavour compared to pink oysters, and they keep for several days in the fridge. At thirty quid it is not cheap, but when you work out the cost per gram of harvest it is actually one of the best values in our lineup.

#3: King Oyster Indoor Kit. 7.8/10

Price: £24.99 · Species: King Oyster (Pleurotus eryngii) · Harvest: 14–21 days

King oysters are the odd ones out in the oyster family. Where other oysters grow in shelf-like clusters, kings produce thick, individual stems with small caps. more like a porcini in shape. They are prized by chefs because you can slice the stems into thick rounds and sear them like scallops. This kit takes longer than the others (expect two to three weeks before your first harvest) and it needs cooler conditions (12–18°C is ideal). We found it fruited best in our spare room during autumn when temperatures naturally dropped. The yields were respectable. around 200g across two flushes. and the mushrooms were genuinely impressive. Meaty, dense, with a rich savoury flavour. Not the easiest oyster kit for beginners, but if you want the most gourmet result, this is the one.

How We Chose These Kits

We grew every oyster kit simultaneously in the same room so each had identical conditions. Our scoring accounts for:

  • Total yield. Weighed across all flushes, measured in grams per pound spent.
  • Substrate quality. How well colonised was the block on arrival? Poor colonisation means slower fruiting and higher contamination risk.
  • Flavour and texture. We cooked each harvest using the same simple preparation (pan-fried in butter with a pinch of salt) and rated blind.
  • Consistency. Some kits produce one great flush then nothing. We value kits that deliver reliably across multiple flushes.
  • Ease of growing. Temperature requirements, misting frequency, and how much faffing about is needed.
